Roasted Red Pepper & Sun Dried Tomato Whole Wheat Pasta


1 Bag of Whole Wheat Pasta or Brown Rice Pasta

1 red onion

1/4 cup of sun dried tomato

1 tbsp of minced garlic

2 medium sized red peppers

1/4 cup of goat cheese

4 tbsp of oilve oil

salt and pepper to taste 


Boil water, add pasta cook for 10-12 minutes. Saute red onion, garlic, chopped red peppers, sun dried tomato, in the olive oil, add salt and pepper. Saute for 10 minutes. Add pasta, stir for 5 minutes, add the goat cheese, stir for 2 minutes, and ready to serve.

Enjoy the dish hot or cold.
