Spelt and Brown Rice Pizza Dough 


1cup of warm water

1 tbsp yeast 

1 tsp salt

2 tbsp olive oil 

1 clove of garlic

1 cup of brown rice flour 

1 1/2 cup of spelt flour 

Begin with 1 cup of warm water in a bowl, gradually add yeast, sprinkling slowly so all yeast touches water. Let sit for 5 minutes. Wisk or beat until dissolved. Add salt, garlic and olive oil to the yeast, wisk or beat for 1 minute. Add 1 cup of rice flour and 1 cup of spelt flour to the mixture, using a wooden spoon start to shape the dough into a large ball. Dust hands with flour and start to kneed the dough into a ball, pushing it down with the heel of your hands, then pulling it together and repeating until the dough becomes firm and elastic, do this for 5 minutes. Lightly oil the surface of a large bowl, place the dough in the bowl, cover the bowl with a plastic wrap, and set aside in a reasonably warm place to rise for 1 1/2  hour. It should double in size. Remove risen dough from the bowl, set it on the prepared surface, roll the dough out. 

If not using immediately wrap it in a plastic covering and place it in a zippered plastic bag and freeze it for up to 2 months.

Bake the dough at 500 F for 15-20 minutes
