Stuffed Mushrooms

20 large button mushrooms

1 small red onion(organic)

2 garlic cloves or 2 Tbps. of minced garlic 

5 sun dried tomato’s 

2 Tbsp. of cilantro 

Salt and pepper to taste

4 Tbsp. of whole wheat bread crumbs 


Heat stove at med temperature, add olive oil to pan, add chopped garlic, red onions, chopped sun dried tomato’s, chopped cilantro and salt and pepper, saute until golden brown. Pop the stems off the mushrooms and chop the stems into small pieces and add to the pan for sauteing.  Pre heat oven to 350, place the mushroom caps on a cookie sheet facing up and ready to be stuffed. Stuff the mushrooms tight with the sauteed ingredients, sprinkle bread crumbs over the stuffed mushrooms and place in the oven for 20 minutes. Ready to serve
