Ingredients:

1 large Tomato 

1 med red onion 

2 cloves of garlic 

1/4 cup of fresh basil

1/2 small lemon

1/4 cup of olive oil 

salt and pepper to taste 

Directions:

Chop the tomato, red onion, garlic and basil, place it in a bowl, stir it a few times add the olive oil, lemon, salt and pepper. Let sit for 5 minutes and ready to serve.

You can serve it on a toasted whole wheat baguette, rice crackers, whole wheat crackers, spelt crackers, etc.
